“That first week back to school is all about creating comfort and routine. McCain Smiles are such a sweet way to bring a little fun to the plate while keeping things quick and easy for everyone.” —
Heat a tablespoon of butter in a saute pan over low to medium heat and saute the onions for 3-4 minutes. Add the garlic, celery, carrots and salt and continue to cook, stirring occasionally, an additional 4 minutes. Remove the vegetables to a plate.
Heat the remaining butter over low to medium heat and whisk in the flour to make a roux. Add the chicken broth and cream, stirring continuously until thickened, about 4 minutes.
Add the vegetables back into the mixture along with the broccoli and chicken and allow to simmer for 4 minutes or until the vegetables are fork tender.
While the chicken/vegetable mixture is simmering, place the Smiles in an air fryer and cook according to package directions (300 degrees for 7-9 minutes).
Place the Smiles on top of the chicken/vegetable mixture and serve.
