Cheerful Chicken Vegetable Skillet Dinner

Ingredients

  • 4 tablespoons unsalted butter, divided
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 celery stack, diced
  • 2 carrots, peeled and chopped
  • 1 teaspoon kosher salt
  • 3 tablespoons all purpose flour
  • 2  cups chicken broth
  • ½ cups cream
  • 1 cup broccoli florets, chopped
  • 2 cup cooked or rotisserie chicken, cubed or chopped
  • A package of Smiles (or 1 container biscuits)

How to make it

  1. Heat a tablespoon of butter in a saute pan over low to medium heat and saute the onions for 3-4 minutes. Add the garlic, celery, carrots and salt and continue to cook, stirring occasionally, an additional 4 minutes. Remove the vegetables to a plate.
  2. Heat the remaining butter over low to medium heat and whisk in the flour to make a roux. Add the chicken broth and cream, stirring continuously until thickened, about 4 minutes.
  3. Add the vegetables back into the mixture along with the broccoli and chicken and allow to simmer for 4 minutes or until the vegetables are fork tender.
  4. While the chicken/vegetable mixture is simmering, place the Smiles in an air fryer and cook according to package directions (300 degrees for 7-9 minutes).
  5. Place the Smiles on top of the chicken/vegetable mixture and serve.
