That first week back to school is all about creating comfort and routine. McCain Smiles are such a sweet way to bring a little fun to the plate while keeping things quick and easy for everyone.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 lb ground beef or turkey
  • 2 teaspoons kosher salt
  • 1 teaspoon chili powder (add another teaspoon if you like it to have more heat!)
  • 1 ½ teaspoon smoked paprika
  • 2 teaspoons cumin
  • 1-15 ounce can kidney or black beans, drained and rinsed
  • 1-15 ounce can chopped tomatoes (fire roasted add a deeper flavor)
  • 1 lime
  • 1/2 lb McCain Smiles

Toppings: sour cream, grated mozzarella/cheddar and or mexican blend cheese, diced tomatoes

How to make it

  1. Heat the oil in a cast iron pan over medium heat. Add the onions and saute for 4-5 minutes or until they begin to soften.
  2. Add the garlic and saute for 1 minute,
  3. Add the ground beef, salt, chili powder, smoked paprika and cumin and saute for 5 minutes or until the beef is cooked through.
  4. Add the beans, tomatoes, lime juice and simmer for an additional 3 minutes to reduce slightly and heat through.
  5. While the chili is cooking, place the Smiles in an air fryer and cook according to package directions (300 degrees for 7-9 minutes).
  6. Place the Smiles on top of chili and serve with toppings on the side.
