Ingredients

  • 1 bag McCain Craft Beer Battered Fries
  • 1 cup whole milk ricotta
  • Zest and juice of half a lemon
  • 2 tablespoons olive oil
  • Pinch of flaky salt
  • 3 tablespoons pesto
  • 4 slices prosciutto
  • Shaved parmesan, to taste
  • Hot honey, for drizzling
  • Marinated artichokes, olives, and fresh basil for the side

How to make it

  1. Cook the fries: Prepare McCain Craft Beer Battered Fries according to package instructions until golden and crispy.
  2. Whip the lemon ricotta: In a bowl, combine ricotta, lemon zest, lemon juice, olive oil, and a pinch of flaky salt. Whip with a hand mixer or whisk until light and smooth.
  3. Crisp the prosciutto: Heat a dry pan over medium heat and cook prosciutto slices for 2 to 3 minutes per side until crisp. Transfer to a plate and tear into pieces.
  4. Assemble the plate: Spread the whipped lemon ricotta onto a shallow bowl or plate using the back of a spoon. Swoosh the pesto across the ricotta.
  5. Add toppings: Layer the crispy prosciutto across the ricotta and pesto. Pile the hot McCain fries on top while still warm.
