“If you love a fresh, springy snack plate, try this easy and tasty recipe with fried halloumi, jammy eggs on a bed of crispy McCain Craft Beer Battered Fries. With a side of herby snap pea salad and a dippable light Greek yogurt ranch, it’s an easy, satisfying option for the season.”
Make your Greek yogurt ranch by mixing together yogurt, ranch seasoning and fresh dill until combined. Set aside.
To make snap pea salad, combine snap peas, 1 tbsp olive oil, vinegar, fresh mint and ¼ tsp sea salt in a bowl. Set aside to marinate.
To make jammy eggs, set a medium saucepan full of water over high heat. Bring to a boil, then carefully drop in your eggs. Let cook for 6-7 minutes (depending on size of eggs and how jammy you want them), then immediately remove and place in an ice bath to cool.
To make fried halloumi, dry off halloumi slices very well. Heat remaining 1 tbsp olive oil in a cast iron pan or skillet over medium. Once hot, add halloumi slices in a single layer and let cook for 3-4 minutes until lightly browned on one side. Flip and finish cooking for another 3 minutes. Remove.
To make the fries, add McCain Craft Beer Battered Fries in a single layer to an air fryer tray or basket. Air fry at 400F for 6 minutes on each side, then remove and toss fries with garlic powder, Italian seasoning and remaining ¼ tsp sea salt.
Assemble plates with fries, jammy eggs, fried halloumi, snap pea salad, greek yogurt ranch and any other veggies you like (cucumbers, artichokes etc.) Enjoy!
