Ingredients
- 1 bag McCain Craft Beer Battered Onion Rings
- 1 cup Beer Cheese Sauce (recipe below)
- 2 oz Stone Ground Mustard
- 2–3 Gherkins
Beer Cheese Sauce (makes 1 cup):
- 1 tbsp unsalted butter
- 1 tbsp all-purpose flour
- ½ cup whole milk
- ¼ cup lager or wheat beer
- ½ tsp Dijon mustard
- 1 tsp Worcestershire sauce
- ¼ tsp garlic powder
- ⅛ tsp onion powder
- ⅛ tsp smoked paprika
- Pinch kosher salt
- 1 cup sharp cheddar cheese, shredded
- ½ cup smoked Gouda cheese, shredded (or Swiss cheese)
How to make it
Step 1. Prepare the Beer Cheese Sauce and keep warm over low heat:
- Melt the butter in a small saucepan over medium heat.
- Whisk in the flour and cook for 1 minute, stirring constantly, to form a smooth roux.
- Slowly whisk in the milk followed by the beer until smooth. Bring to a gentle simmer and cook for 1–2 minutes, until slightly thickened.
- Stir in the Dijon mustard, Worcestershire sauce, garlic powder, onion powder, smoked paprika, and salt.
- Reduce the heat to low. Gradually whisk in the cheddar and smoked Gouda until completely melted and smooth.
- Serve warm alongside McCain Craft Beer Battered Onion Rings. If the sauce thickens while standing, whisk in a splash of warm milk or beer to loosen it.
Step 2.
- Cook the McCain Craft Beer Battered Onion Rings according to package directions until crisp and golden.
- Warm the sauerkraut in a small saucepan.
- Arrange the onion rings in a serving platter.
- Serve the warm beer cheese sauce in a generous bowl alongside the onion rings.
