Bring Oktoberfest home with this hearty, beer hall-inspired twist on poutine. Crispy McCain Craft Beer Slices are topped with pan-seared bratwurst, melty cheese and a rich mustard gravy for the ultimate shareable appetizer that's perfect for game day, backyard gatherings and fall entertaining.

Ingredients

  • 2 bratwurst sausages
  • 1 package poutine gravy mix (or brown gravy mix)
  • Water, as directed on package
  • 1/2 packet onion soup mix
  • 3 tsp stone-ground mustard
  • 1 tsp Worcestershire sauce
  • 1 bag McCain Craft Beer Slices
  • 1.5 cups cheese curds*
  • 2 tbsp sliced scallions

*substitute fresh cheese curds for mozzarella string cheese sticks, chopped into bite-sized pieces. For a richer, beer hall-inspired twist, combine with 1/2 cup shredded Gruyère sprinkle on top.

How to make it

  1. Heat a large skillet over medium heat. Add the bratwurst and cook, turning occasionally, until browned on all sides and cooked through, about 10–12 minutes. Transfer to a cutting board and let rest for 5 minutes before slicing into ¼-inch rounds.
  2. Meanwhile, prepare the gravy according to the package directions. Whisk in the onion soup mix, stone-ground mustard and Worcestershire sauce. Bring to a simmer and cook for 5–7 minutes, stirring occasionally. The recipe yields approximately 2 cups of gravy.
  3. Cook the McCain Craft Beer Slices according to the package directions until golden brown and crispy.
  4. Transfer the hot McCain Craft Beer Slices to a cast-iron skillet or oven-safe serving dish. Scatter the cheese curds evenly over the slices, then top with the sliced bratwurst.
  5. Spoon approximately 1½ cups of the hot gravy evenly over the slices, cheese and bratwurst.
  6. Place under the broiler for 30–60 seconds, just until the cheese is melted.
  7. Garnish with the sliced scallions and serve immediately.

 

Chef's Note

For the best texture, serve immediately while the fries are crisp and the cheese is perfectly melted. If poutine gravy mix isn't available, brown gravy mix works just as well. Leftover gravy is delicious served on the side for dipping.
